Why are the essential micronutrients missing from most of our fruits and vegetables?
Harvesting of the produce GREEN to cope with long distance transport to cities is the main reason for micronutrient deficiency in our food. The biological signal for food to produce the micronutrient molecules occurs at maturity of the fruit, vegetable or seed. When fruits and vegetables are picked green, it is before the micronutrient molecules are present.
